For my first post on here I decided to do a look ahead at my travels this summer. This summer I will be one of the assistant chefs for the Boston Crusaders Drum and Bugle Corps during their tour with Drum Corps International. Drum Corps is basically the major leagues of marching band except they only perform on brass and percussion instruments as well as flags, rifles, sabres, and dance. Each corps in Drum Corps International (DCI) can have up to 150 members and sometimes as many as 50 staff and volunteers on any given day on tour. This proves to be quite the challenge for the chefs in the food truck, who work out of a tractor trailer converted into a kitchen, as we prepare four full meals per day for up to 200 people every day of the summer. Me along with two others, the head chef, and kitchen manager, a long-time volunteer, are responsible for running a massive operation out of a trailer and a different location across the country almost every day! I'll do my best to post updates and food porn of my experiences.
